  • 1 large bunch of celery, chopped (about 6-8 stalks)
  • 1 onion, finely chopped

  • 2 medium potatoes, peeled and diced (for creaminess)
  • 4 cups (1 liter) vegetable or chicken stock
  • 1 cup (240 ml) milk or cream (optional for extra creaminess)
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)
  • Fresh parsley or chives for garnish
  • Lemon juice (optional, for brightness)

Instructions:

  1. Sauté the vegetables: In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.

  2. Add celery and potatoes: Stir in the chopped celery and diced potatoes. Cook for another 5-7 minutes until the celery begins to soften.
